Rocky Mountain Jello Shots

I'm not quite sure where these Rocky Mountain Jello Shots got their name - I guess nothing says "Rocky Mountain" like peach schnapps and pineapple jello. Nonetheless, they are worth a try. Pineapple jello can be a bit hard to find, but it blends well with the peach schnapps. Sprite definitely puts these shots on the sweeter side - a good choice if you are looking for a recipe with less of an alcohol flavor.

How to make Rocky Mountain Jello Shots in Cups
Start with a large glass measuring cup and measure 1 cup of Sprite or 7up. Heat it up to steaming, but not boiling. Dissolve 1 box of Pineapple Jello (3 oz size) and stir until fully dissolved. Add 1/4 cup of cold water and 3/4 cup of Peach Schnapps. Stir well and cool before pouring into jello shot cups. This recipe makes about 16 shots - adjust as needed for your party.
