Italian Surfer Jello Shots

I don't usually associate Italians and surfing, but maybe I should rethink that with these Italian Surfer jello shots. Pineapple jello is what inspires sun and surf while amaretto puts a little Italian in the mix, and a little Italian can go a long way! If you can't find pineapple jello, consider substituting pineapple juice and Knox gelatin instead, just make sure the juice is canned instead of fresh to make sure that your shots set. Surf's up!

How to make Italian SurferJello Shots in Cups
Start with a large glass measuring cup and measure 1 cup of boiling water. Dissolve 1 envelope of Pineapple Jello (3 oz size) and stir until fully dissolved. Add 1/2 cup of cold water, 1/4 cup of Brandy and 1/4 cup of Amaretto. Stir well and cool before pouring into jello shot cups. This recipe makes about 16 shots - adjust as needed for your party.
